GOAT CHEESE!

Bosky Acres soft unripened goat cheese ( also known as Chevre) starts with fresh wholesome goat milk from dairy goats.

The goat milk is the best that can be produced. We employ sustainable practices, giving the goats plenty of fresh air, exercise, pasture and browse, and whole grain feed and hay. The farm is licensed, regularly inspected, and tested for clean healthy milk. We know that only a high quality milk can make a great tasting cheese.

The goat milk is gently pastuerized with the low temperature, long period method, which insures that the milk keeps its' best qualities, while making it safe for fresh cheese making.

After pastuerization, the milk is cooled to temperature for adding the mesophilic culture. The culture is the friendly bacteria that gives the cheese its' unique flavor, and lowers the ph to a level that leaves little room for harmful bacteria. The rennet is also added at this time. The rennets' job is to curdle up the milk proteins, and drive the liquid whey apart from the milk solids. The culture and rennet take many hours to do their work, and when they are done, the resulting fresh cheese curd is gently scooped and drained.

After draining, the cheese is cooled, ready for packaging, and delivery to the market and your table!
